Elegant Chocolate Cake

This cake is absolutely to die for. If you have ever had the chocolate volcano at Don Pablos or the chocolate molten cake at Chilis, this is right up there with it. The only thing missing is the fudge and ice cream on top but who says you can’t add it? If you don’t like really rich desserts, this is not for you. And you definitely need a glass of milk to go with.

3 eggs
1 c sugar
3/4 c vegetable oil
1/4 c milk
3/4 c all purpose flour
1/2 c cocoa powder
1/2 tsp baking powder
1/2 tsp salt
1/2 tsp vanilla extract
1 package (14 ounces) caramels
1/4 c water
1 c chopped pecans
Whipped cream and additional pecans (optional)

In a mixing bowl, beat eggs, sugar, oil, and milk. Combine the flour, cocoa, baking powder and salt; gradually add to egg mixture and mix well. Stir in vanilla. Transfer to a greased 8 in. square baking pan. Bake at 350 degrees for 30-35 minutes or until a toothpick comes out clean. Cool on a wire rack.

In a heavy saucepan, combine caramels in water. Cook and stir over low heat until smooth. Add pecans. Cool slightly. Cut the cake into squares; drizzle with warm caramel sauce. Top with whipped cream and pecans if desired.

Avoiding BPA – Two things to avoid the chemical BPA that are easy to do… switch to a BPA free plastic water bottle or a stainless steel one. This cuts down on disposable water bottles and will still keep you safe. Switch to fresh or jarred tomato sauce. The lining in most cans have BPA in them and it is leeched into acidic foods easier.
